Make Ahead Bacon and Cheese Potatoes

I love to experiment on our dinner guests.  They are the perfect guinea pigs.  Even if I make something terrible, they will probably be polite and eat it anyway!  Sweet deal!  The other day I had been wanting to try a dish that I could prepare ahead of time. I was making tri-tip as the main course so I decided that a mean side of potatoes would be a great combo. The Make Ahead potatoes was a hit.  You can’t go wrong with the potato, bacon and cheese trifecta. This would be a great dish for a potluck, or casual dinner with friends. Definitely a crowd-pleaser.

Make Ahead Bacon and Cheese Potatoes

  Make Ahead Bacon and Cheese potatoes.

Ingredients

  • 3 pounds potatoes (about 9 medium), cubed
  • 1 package (8 ounces) cream cheese, softened
  • 3/4 cup sour cream
  • 3/4 cup butter, cubed
  • 1/4 cup 2% milk
  • 1-1/2 teaspoons onion powder
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon pepper
  • 1 package bacon, cooked and roughly chopped
  • 2 cup (4 ounces) shredded cheddar cheese
  • 1/2 bunch green onions, chopped

Directions

  • Bake or boil potatoes (I baked mine for about 60 minutes at 425 degrees so I could run off and do other things.) Mash potatoes with cream cheese, sour cream and butter. Stir in milk and seasonings.
  • Bake bacon.  Remove, drain excess oil/fat and chop bacon.
  • Transfer potato mixture to a greased 13-in. x 9-in. baking dish; sprinkle with cheese, onions and bacon. Cover and refrigerate until ready to use.
  • Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 40-50 minutes or until heated through.
