Healthy Morning Muffins

February 11, 2013

I love having snacks in the house that I can eat on-the-go in the morning.  These muffins are a perfect morning snack before work, a run or to satisfy my sweet tooth.  They aren’t that sweet and they have oats, carrots, raisins, bananas and a little bit of cinnamon and sugar to give them a light and refreshing taste.  I also mixed half of the batch with chocolate chips since my husband doesn’t like chocolate….very tasty with a few in there!  I think these would be pretty tasty with some zucchini and walnuts as well; I’ll try it next time.

1. Preheat oven to 400 degrees. Coat a 12-cup muffin pan with cooking spray or muffin tins. In a large bowl, whisk together flour, brown sugar, baking soda, baking powder, nutmeg, cinnamon and salt until there are no lumps. Stir in oats, chocolate chips (optional) and raisins.
