Red Velvet Strawberry Shortcake

December 18, 2012

Sunday was my sister’s 21st birthday and I wanted to make her cake.  Her favorite flavors are strawberry and mango, so I decided to go pinning and see what reasonable recipes I could find. I found a recipe for red velvet strawberry shortcake from “I Am Baker” and adapted it to make it even easier. What was neat about the way I adapted it is that you can get a second cake out of it to give away or to quietly eat at midnight when everyone is sleeping 😉 The problem with this recipe is that the cool whip kept magically landing in my mouth along the way…..weird how that happens. Anyway, my sister loved the cake!!!  I can definitely add this recipe to my repertoire of baked goods, especially for birthdays!
