Pumpkin Spice and Cheese Bread

Last night was the first night in that it actually felt like fall. The previous two nights it was between 80-90 degrees AT NIGHT! I don’t remember the last time it was that hot.  In celebration of the changing weather I decided to make my first fall recipe 😉

Pumpkin Spice and Cheese Bread

Fall Dessert

 Cheese Mixture:

8 oz cream cheese or Neufchatel Cheese, room temperature
1 large egg, room temperature, lightly beaten
1/4 cup powdered sugar, tightly packed
1/2 teaspoon pure vanilla extract

For the Pumpkin Spice Batter:

1 cup brown sugar, lightly packed
2 large eggs
3/4 cup pumpkin puree such as Ms. Libby’s
2 tablespoons vegetable oil
1 teaspoon pure vanilla extract
1 1/4 cups all-purpose flour
1 1/4 teaspoons baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
3/4 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon Pumpkin Pie Spice
Butter for greasing the pan

Fall Dessert

Directions:

1. Combine all ingredients from “Cheese Mixture” with an electric hand mixer until smooth.
2. Preheat oven to 350 degrees and grease bottom of 9.25 x 5.25 x 2.75 loaf pan with butter.
3. Whisk the brown sugar and eggs together until fluffy. Stir in pumpkin, vegetable oil and vanilla.
4. In a separate bowl, whisk the flour, baking powder, baking soda, salt, cinnamon, nutmeg and pumpkin pie spice.
5. Stir in the dry ingredients into the wet pumpkin mixture.
6. Pour pumpkin batter into loaf pan. Pour Cheese mixture on top.
7. Bake for 50-60 minutes, until golden around edges or until toothpick comes out with a few crumbles.
8. Cool for a few minutes, then remove from pan and place on a wire rack to finish cooling.

    I love cheese and pumpkin. This is a perfect combo! Looks delicious and would be great tomorrow morning with my coffee 🙂
