Red Velvet Strawberry Shortcake
Sunday was my sister’s 21st birthday and I wanted to make her cake. Her favorite flavors are strawberry and mango, so I decided to go pinning and see what reasonable recipes I could find. I found a recipe for red velvet strawberry shortcake from “I Am Baker” and adapted it to make it even easier. What was neat about the way I adapted it is that you can get a second cake out of it to give away or to quietly eat at midnight when everyone is sleeping
The problem with this recipe is that the cool whip kept magically landing in my mouth along the way…..weird how that happens. Anyway, my sister loved the cake!!! I can definitely add this recipe to my repertoire of baked goods, especially for birthdays!
Red Velvet Strawberry Shortcake
Ingredients:
1 large container of cool whip or whipped cream
1 box of red velvet cake mix (and the ingredients that go with this mix, eggs, oil, etc)
1 box of white cake mix (and the ingredients that go with this mix)
Fresh strawberries (chopped)
Directions:
Prepare red velvet cake mix according to the box. Bake using 9 inch round pans.
Do same for white cake mix.
Let cakes cool for at least 30 minutes before frosting.
Layer cake: red velvet, then a generous amount of cool whip, strawberries, white cake, cool whip on top and all around, then decorate prn (as needed) with strawberries!
